5 Recipes You Need this Fall

As the air gets cooler, the sun sets sooner, and you reach for your favorite sweater- you may also catch yourself reaching for food that doesn’t serve your soul. I’ve gathered some of my favorite fall recipes that are EASY, HEALTHY, and most importantly- AFFORDABLE!

1.The Butternut Squash Soup of Your Dreams

This easy-to-make, naturally gluten-free and vegan, and so incredibly cozy soup can be made on stovetop, Crock-Pot, or even Instant Pot!

The star of the meal is- you guessed it- butternut squash. Accentuated by onion, and garlic and made extra creamy with coconut milk, this recipe takes minimal effort for maximum cozy.

2. This Single- Pan Chicken Recipe with Grapes and Rosemary

I hate washing dishes, so a single-pan recipe makes my life so much better! This meal takes your classic chicken recipe and adds in the fun, fall flavors of juicy grapes and cozy rosemary. It’s easy, it’s delicious, and it’s beautiful!

3. The Best Crock Pot Apple Cider You’ve Ever Had

I have to be honest, this is my favorite from the list. I make this every year and my friends rave about it. They have no idea that it’s literally 4 ingredients. The secret- oranges! I guess you really can compare apples and oranges then, huh?

Pour a container of apple cider from the store into your crockpot. I like to squeeze half of an orange into the crockpot and slice up the other half and stick whole cloves into the rind. Put some whole cinnamon sticks into the mixture, and cook on low for 4 hours!

4. Fresh and Local Farmer’s Market Pasta

Farmer’s Markets are great. They support small businesses, provide freshness, and are often cheaper than your local grocery chain.

This recipe will really come down to you! My favorite seasonal veggies to use are Brussels sprouts, zucchini, squash, mushrooms, onion, garlic, and tomatoes. You can also pick up fresh herbs from the Farmer’s Market to really make the flavor pop (like sage, rosemary, and basil)! Roast your chosen seasonal veggies in a pan and season to taste. Serve over your favorite pasta and top with fresh sauce.

To make it extra healthy: use gluten free pastas such as lentil-based, brown-rice based, buckwheat noodles, or glass noodles.

5. A Seasonal Salad for those Strangely Warm Days

Let’s face it, depending on where you live- “fall” is actually still summer temperatures with a few leaves falling off the trees. If you want a refreshing but still cozy meal, make a harvest salad!

Healthy greens topped with candied walnuts, pomegranate, cranberries, and goat cheese form a beautiful flavor blend.

I like to add my own spin by incorporating pears, dates, or figs!
